Of course!!!
You should have seen the kids faces the first time I made them cookies for breakfast… Breakfast Cookies, that is 🙂 These taste great, are easy and quick to make and are eaten without hesitation in this household…
This recipe makes 4 monster cookies and they keep very well if you make more and eat them later… or you can mix the dry ingredients before hand and then just add the apple sauce when needed…
Mix together
- 1 1/3 cup Oatmeal
- 1/4 cup raisins
- 1/4 cup chocolate chips
- 1/4 cup flour
- 1 cup non-fat powdered milk (dairy or soy)
- 1/4 cup sugar
- 1 tsp baking powder
- pinch of salt
- 1 tsp cinnamon
add in
- 1 to 1 1/3 cup Apple Sauce
- 1 tsp vanilla
Mix until you have a wet dough… you can add more apple sauce if needed depending on if you want a chewier and lighter or a more dense cookie.
Make 4 mounds on two parchment paper lined baking sheets (2 on each) and bake in preheated 350 degree oven for about 15 min…
Eat while still a bit warm…
(This one was made with less apple sauce for a more dense version)
(Adding a bit more Apple sauce gives a lighter version…. this is our favourite )
Where do you find powdered soy milk?
The cookies look great!
Kim, I haven’t found any where I live, but I know that others have in bigger cities…. I am pretty sure it can be found in larger natural food stores.
Ammy, Since the applesauce is the only wet ingredient, using regular milk wouldn’t work in this. The powdered milk goes in dry and then works to help hold it all together and is reconstituted a bit by the applesauce. You can buy powdered milk in the baking section of grocery stores.
You can buy powdered milk on Amazon. I’ve seen rice, dairy, goat, and soy on there. Thats the only way I was able to solve the powdered milk dilemma when trying to bake something both my sister (lactose intolerant) and I (soy allergy) could eat.
Good tip for those south of the border. We are in Canada and Amazon does not have food. There might be other resources online though but I have not seen any that have non dairy powdered milks. (dairy powdered milk can be bought at any grocery store here though)
Yum! Cookies for breakfast!!
I have found my new breakfast, thanks!
Hi, I love this recipe! But I’ve never worked powdered milk before. Could regular milk be used instead? If so, how much would you recommend? I have a daughter here drooling over your pictures of this!
thank you!
Hello! Is this an updated version of the recipe that you contributed over at Fat2FitRadio? I would love to make these but had two quick questions. [01] Does the 1 cup non-fat powdered milk refer to literally one cup of that (measure like any other ingredient) or do you mean the amount used to make 8oz of milk? [02] I’m not an experienced cook – could you please give me a description of the texture that the mix should be if I would like the flatter version of the cookie? Would you say that by adding the larger quantity of applesauce, the dough will result in being similar to, say, an oatmeal cookie dough? I have no idea, since the typical cookie recipe has eggs, butter, etc. Thanks for sharing the recipe! 🙂
You’re welcome!
Yes, you measure the powdered milk unprepared as a powder. For the flatter version you want the texture to be a bit more like pudding… kind of goopy… The dough is a bit more chewy than a traditional oatmeal cookie but they taste great and you can really play with the recipe to get different flavours and textures. Hope you enjoy it!
Thank you for responding so quickly!
These are great! They are basically healthy and the small bits of chocolate chips and raisins are just enough for natural sweetness!
Have a nice day! And thanks for sharing.
Hi, just wanted to let you know I heard about your recipe on Fat2Fit Radio, and just now found this updated recipe. I made the old recipe this morning, and despite substituting a couple things (like apple butter instead of applesauce lol), the cookies were good! I’ll try the new version next time to compare, so yeah — thanks!
