Crispy Tofu on Coconut Quinoa… two ways!

This is a variation of a recipe that Annie shared with me a while back and I love it!

Usually I make another variation of her way and make curried tofu (the recipe is at the end for that) and of course that is always delicious but I was craving spicy peanut sauce tonight…

What I love about this recipe also is that it takes very little preparation, takes little time to cook, is filling, delicious and nutritious…

For the Coconut Quinoa..

  • Chop up an onion and sauté in a pan until translucent (I sauté it in coconut oil)
  • Add 1 1/2 cup of Quinoa.. I like to leave it in there a few minutes and toast it a bit…
  • Add one can of coconut milk and one can of water and simmer until ready (about 20 min) and then fluff with a fork

Peanut Sauce

  • Mix together in a saucepan on low heat … 1/2 cup smooth peanut butter, 1/2 cup hot water, 3 tsp tamari, 1 tbsp rice wine vinegar, 1 tsp brown sugar and garlic chili sauce (to taste)

Crispy Tofu

  • cube one block of tofu
  • in a container (with a lid) add a few tsps of corn starch, add a bit of salt and garlic powder and then add the tofu and shake so that it evenly coats the tofu
  • Add a few tsp of peanut oil to a wok or pan and toss and fry until crispy on all sides…

Serve the Tofu on the Quinoa and drizzle the peanut sauce on top.

 

If you want to make the curried version don’t make the peanut sauce and instead coat the tofu with the following spice mix:

  • 1 tbsp of cornstarch
  • 1 tsp cumin
  • 1 tbsp curry powder
  • 1 tsp garlic powder
  • 1tsp paprika
  • 1 tsp cayenne (optional if you want the heat or not)
  • 1 tsp sugar
  • 1 tsp salt
  • 1 tsp tumeric…

Fry the tofu in a bit of oil until crispy and serve over the Quinoa with veggie of your choice 🙂

First Snowy day…

Here is looking out my Kitchen Window when I woke up…



a few inches and it hasn’t stopped falling since…

We had breakfast… played around at the kitchen table for a while with modeling beeswax and crayons and then the boys wanted to go play outside… and they stayed there for almost 2 hours…











They played and built things and slid down the stairs on the flying saucer… even though it was a bit “bumpy”…

I just love seeing the kids play outside like that… just having fun…

When they came back in I made some hot Cocoa and put on a movie…






I love these kind of snowy days…

(and yes, Khéna looks tired in the last pics… he fell asleep soon after and is sleeping on me as a write this)

The holidays are coming…

November is quickly coming to an end (Khéna will be 2 on Friday!!!) and of course that means that December will soon be here and the holidays will seem much closer…

Today we had our first snowfall that stuck for more than a few minutes… there is still snow on the ground and I have a feeling that more will be coming soon…

Anyway… the more that I think of the holidays, the more that I just want to boycott them…

Simon and I have already decided that we are not doing anything special, we are using the time he will be at home as family time… we are not inviting anyone over for the eve, and if people want to come over on other days we are not going to make a big deal of it…

Though I like the spirit of the holidays, all the pretty colours and I love taking out our decorations and making the house look all warm and colourful…I am tired of all the expectations…  I am done with buying gifts just because I am expected to buy them without really wanting to, or knowing what someone wants or needs…I am tired of getting gifts that I don’t want or need and just end up cluttering space somewhere… and I am tired of people buying toys for the boys that are cheap, boring, loud or the kids are just not interested in…

I don’t think I would give up the holidays for our small family… we’ll keep the tree and a few choice gifts, we’ll keep some old traditions and continue to make new…

but there are things that I am ready to give up…

what's for supper tonight?

I am getting so tired of asking that question…

even though I have bought the ingredients for the weeks meals I never seem to feel like eating or making the things I planned… It doesn’t help that I am feeling (and am) very picky on the most part… (no pasta, not too much rice, not too fond of tomato based recipes, not too fond of beans, don’t like bland etc…)

And well…. It has been two weeks now that I just don’t feel like eating meat… at all… so many of the dishes that often made it onto the meal plan are out… which gives me even less to work with… I have been scouring websites and blogs the last few days trying to find things that I feel like eating… but finding things that look good and are easy enough to make when kids need your attention is a bit hard…

And it doesn’t help that the boys are a bit reluctant to try new things… They did like the souvlaki I made last week, but didn’t want to eat the veggie burgers I made last night… though I have to admit that they were a bit dense for me also…
Tonight I am making BBQ seitan with mashed potatoes… we’ll see what they say….
