Fried Chicken Sandwiches…

I was having a craving for some fried chicken sandwiches… the kind that you get at fast food places but better… These turned out even better than I would have hoped, they were perfect and everyone loved them!


Spicy Chicken Sandwich

I had 4 chicken breasts, so it made 8 sandwiches.

To begin with, cut a chicken breast in half horizontally. (So place chicken breast on cutting board, place knife on the side of it and cut with the knife parallel to the board)

Place the halved breasts in a bowl, bag or container and add 1 1/2 cup  buttermilk (or a mix of 1 1/2 c of milk with 1 1/2 tbsp of lemon juice).

Marinate  for at least 6 hours (overnight is better though)

Take chicken out of the Fridge at least 30 min before frying and in a container/bowl/bag put 2 cups of flour and the following:

  • 1/2 tablespoon paprika
  • 1  teaspoons kosher salt
  • 1  teaspoons freshly ground black pepper
  • 1/2  teaspoon garlic powder
  • 1/2  teaspoon onion powder
  • 1/2 teaspoon cayenne pepper
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried thyme

Dip the chicken into the Seasoned Flour and then place on a plate and if you want you can redip into the buttermilk and then redip into the flour for more of a crust.

Prepare Oil in a pan, I used my favourite Cast Iron Skillet and added about 1 1/2 inch of oil and heated it up to 325 using a candy/oil thermometer.

Fry the chicken for a few minutes each side until done and golden brown. (it took about 3 min on each side for mine) and place on a few paper towels.

Place on a bun with lettuce and Mayo and whatever else you like…

I love the spicy mayo on these kind of sandwiches so I made a  mix with Mayo and Frank’s Red Hot and it was perfect.

This is definitely something that I will be making again in the near future…

I have never had a Fried chicken sandwich that tasted as fresh and crispy as this, and of course, by making by own bread the cost of these are minimal…

Beef, noodle, veggie Pho… yummy…

This is just one of those non recipes… Most of my cooking is made this way…

Today.. It started with this…

Beef for Pho

A few beef shanks, bones and some slightly freezer burned steak roasting in a pan with a few onions…

Then after a bit more than an hour the stock was started with the roasted beef and onion, all the pan drippings, two heads of garlic, a few large pieces of ginger, star anise, carrots and a few stalks of celery and then covered with water…

After a few hours of simmering, I let it cool, adjusted the seasonings (a bit of tamari and garlic powder were perfect) and then skimmed the fat and strained it leaving a beautiful and fragrant beef broth…

The wok came out and in went a bit of peanut oil and thinly sliced beef marinated in Hoisen sauce for a few seconds, then set it aside…

Then a bit more peanut oil went into my wok along with ginger, garlic, Chinese cabbage, thinly cut celery, carrots and bean sprouts… I added a few ladles of stock and covered until cooked but not soggy… and then set that aside also…

A few toy choy went into the wok… and then in a bit of water with a bit of Tamari and some noodles while I reheated the broth…

When everything was ready, the noodles went into the bowl… then the veggies, the beef and the toy choy with a a few ladles of broth on top…

A squeeze of lime, a bit of Sriracha Chile sauce and it was perfect…

Quinoa salad…

I hadn’t tried Quinoa until last year but since then I have been hooked.

My favourites are the coconut quinoa that Annie shared with me… and this Quinoa salad…

Quinoa Salad

it is so easy to make, simple and fresh and full of flavour…

It is one of those non-recipes…where you just throw things in and adjust the taste as needed…

First,  cook the Quinoa the same as you would rice….

When cooked and cooled a bit (but still a bit warm), add some chopped up veggies…I like adding peppers and carrots and celery. Then add a bit of olive oil, some salt or tamari to taste, some fresh (or dried) parsley, a bit of garlic powder and I like adding a bit of curry powder which seems to bring all of the other flavours out…

This is just a simple salad that can be eaten as a side, and because it is so complete nutritionally it can also be a meal in itself and keeps well and travels well…

Caramelized Onion and Spinach Pizza with Peanut sauce…

Annie shared this recipe on her blog a while back and I have been dying to make it…

I used my favourite dough which I shared in this post

For the sauce… (I changed it a bit to suit my taste and Annie’s recipe didn’t have water and it just doesn’t work without it for me)

Peanut Pizza Sauce

  • 3 cloves garlic, minced
  • 1 tbsp Ginger, minced
  • 3-4 heaping tbsp  Peanut Butter
  • 2 tbsp Tamari
  • 1 tbsp Demerara Sugar
  • Garlic Chili Paste (to taste)
  • 2 tbsp Green Onion, chopped (I use two)
  • 1/3 cup of warm water (or more depending on how thin you want it)

Blend together to make a sauce

Ready to be blended…

Peanut sauce is done… this stuff is amazing… not only for pizza but for a dipping sauce also…

Caramelize the onions… I then added garlic, mushrooms and then some spinach…

Spread the sauce on the prepared dough and then add the toppings…

I then added some more fresh spinach and grated carrot…

Bake at 400 for about  15 min…

Vegetable and teriyaki stuffed sole …

I had no idea what I would do when I started this recipe…

but  I knew it would have something to do with stuffing some filets of sole with some veggies…

When I saw the filets all lined up and ready,  I had an idea to add more flavour…

so I quickly made a teriyaki sauce with some tamari, fresh ginger, garlic, sugar, garlic powder and water and then thickened with cornstarch…

(really great sauce btw… next time I will try to figure out the amounts so I can share)

And then rolled it all up and placed in the baking dish…

I served it with some Basmati rice and an extra drizzle of teriyaki…
