A friend of ours met and got married to a girl from Mexico last year…

we have had them over a few times for supper but Zorayda has been wanting to make us some authentic Mexican Cuisine… and because they have a small place they came over here to prepare it…

They also have another friend from Mexico staying with them and we girls had a blast in the kitchen….

and I have to admit that it felt great not having to cook last last after having had a massage yesterday and feeling relaxed and lazy…

So on the menu was Fajitas made with sauteed chicken, onions and peppers, handmade corn tortilla’s, guacamole, salsa and radishes (cut small and covered with lime juice a bit of salt)…

L made the corn tortillas by hand and explained that she was about 7 when her mom taught her…

First she kneaded the dough…

and then put it down on a peice of plastic bag cut into a circle and started her magic…

I was just amazed at how beautiful they turned out…

though I didn’t get a pic… I made some also and they turned out great, I wasn’t as fast and it was not perfectly uniform as hers but I was pretty proud of myself for a first timer!

but the most fun part was when the little spy came and wanted to jump in…

I ended up turning the plastic while he flattened it out and it he was so proud at the results…

Meanwhile… Z was making the rest of the supper…

Sauteed marinated chicken with green and red peppers… and a quick Salsa

For the Salsa she boiled water with an onion and a jalapeno pepper and two tomatoes and then let it boil for a few minutes then strained it, added salt and then mashed it up…

another thing I didn’t get a pic of but I highly enjoyed was radishes that were chopped up finely with lime juice and salt… it was a perfect addition to the fajitas… (oops… actually you can see them next to the Guacamole)
